I love cauliflower. It is such a versatile vegetable and because of it's own mild flavor, can take on the flavors of anything you mix it with. This recipe for loaded cauliflower, courtesy of Allrecipes.com, resembles loaded potatoes but is a healthier version. Enjoy!

Loaded Cauliflower

Makes four servings

• 1 head cauliflower

• 1 c. cooked bacon, drained and crumbled

• ½ c. light sour cream

• ½ c. reduced fat shredded cheddar cheese

• 1 tsp. dry ranch dressing mix

• ½ tsp. onion powder

• ½ tsp. garlic powder

• 1 Tbsp. butter, cut into small pieces

Preheat oven to 350 degrees. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover and steam until very tender, about 15 to 20 minutes. Transfer cauliflower to a bowl, mash, and strain excess water.

Mix cauliflower, sour cream, bacon, cheddar cheese, ranch dressing mix, onion powder and garlic powder together in a nine-inch baking dish; top with butter.

Bake in the preheated oven until bubbling, 30 to 45 minutes.
