If you are like me and love all things spicy, you will love this recipe for Cajun-Roasted Almonds. These almonds aren't too hot, but provide just a little kick to warm you up on these cold days. Enjoy!
Makes four servings
• 4 c. raw almonds
• 4 tsp. extra-virgin olive oil
• 4 tsp. cajun spices
Pre-heat your oven at 325 degrees and line parchment paper on a baking sheet.
In a mixing bowl, toss around the raw nuts, olive oil and only three teaspoons of cajun spices.
Roast the almonds in the oven for 20 to 25 minutes. Once out, sprinkle the last teaspoon of spices on top of the warm nuts, mix gently to make sure all nuts are covered by the extra spices and wait till they cool down before eating them, so the excess oil dries up and they don't burn your mouth.
