Mexican Chicken Avocado Cups

In my ongoing quest to find interesting, flavorful, healthy recipes, I stumbled upon this recipe for Mexican Chicken Avocado Cups, courtesy of These are wonderful! They are light enough to be healthy, but bursting with yummy goodness. Enjoy!

Mexican Chicken Avocado Cups

Makes three servings

• 3 (6 oz.) cans chicken, drained

• 1 Tbsp. cilantro, finely chopped

• ½ tsp. chili powder, or more to taste

• 3 avocados, halved and pitted

• 1 tsp. lime juice

Stir chicken, cilantro and chili powder together in a bowl.

Arrange avocado halves on serving dish and sprinkle with lime juice. Spoon chicken mixture into avocado halves.
