My family really enjoys gathering together for breakfast. With my parents, sister's family and my brother, there are 14 mouths to feed. One of our favorite meals is a breakfast casserole. I found this recipe to be delicious and more than enough for everyone.

Breakfast Casserole

• 1 lb. turkey bacon, cooked, drained, and crumbled

• 1/4 cup diced onion

• 1/4 cup diced green pepper (can use red as well)

• 3 cups shredded low-fat cheddar cheese

• 8 eggs

• 2 cups skim milk

• 1 (16 oz) package frozen shredded hash browns, thawed

• Salt and pepper to taste


Preheat oven to 350 degrees. Lightly grease 11 x 17 inch baking pan. In a large bowl, beat the eggs and milk together. Mix in the onions, bacon, bell peppers and cheese. Stir in the thawed hash browns, salt and pepper and pour into the greased pan.

Cover the pan with foil and bake at 350 degrees for 45 minutes. Uncover and bake an additional 30 minutes or until set.
