Now that my children are gone for the rest of the summer, I suddenly find myself cooking for one, which can get a little lonely. But just because I don't have an army to feed doesn't mean I have to resort to cereal for breakfast, lunch and dinner. To get a good start on the day, why not try this breakfast sandwich with turkey and avocado? Full of protein and healthy fats, it is easy, delicious and good for you. Enjoy!

Breakfast sandwich with turkey and avocado

Makes one sandwich

• 1 tsp. olive oil

• 1 egg

• 2 oz. turkey breast

• 1 slice American or pepper jack cheese

• 1 thick slice of tomato

• 1 wheat English muffin, halved and toasted

• 1 Tbsp. guacamole

• Salt and pepper, to taste

Heat the oil in a small nonstick skillet or saute pan over medium heat until hot. Add the egg and gently fry until the white is set but the yolk is still runny, about five minutes. Season with salt and pepper. Place the turkey on a plate, top with the cheese, and microwave for 30 to 45 seconds, until the turkey is hot and the cheese is melted.

Place the tomato on the bottom half of the English muffin and season with salt and pepper. Top with the turkey and egg. Slather the guacamole on the top half of the muffin and crown the sandwich.
