As the Wadena Hockey Association strives to be more competitive in the 2013-14 season, they have put in the ice earlier to reintroduce a fall league and have brought in an expert to hold a few skating clinics at the rink. Like many other buildings in Wadena, the Wadena Community Center was destroyed in the 2010 tornado. The Wadena Hockey Association, who used the center for hockey practices and games, scrambled to find a place for kids to skate. The first season after the tornado, skaters had the unique experience of playing outdoors. The hard work of many volunteers made this possible. This is, hands down, my family’s favorite meal. It is very easy to make and is perfect for a cold day. Tator Tot Casserole • 1 lb. ground beef or turkey • 1 can (10.75oz) cream of chicken soup • 1 can (10.75oz) cream of celery soup • 1 cup of ketchup • 1 cup of milk • 1 lb. of frozen peas and carrots • 1 package of tator tots • salt and pepper, to taste Cook ground beef until browned, drain off fat. In a large bowl, mix cooked beef with ketchup. Spread ground beef mixture on the bottom of a 13 by 9 inch baking dish. In a separate bowl, mix frozen veggies with both soups.
Several weeks have passed since I last commented on my personal exuberant woman challenge. I figured it was time for an update. One of my greatest challenges has been in the area of negativity. Negative thoughts, comments, situations and people. I find it a struggle to eliminate all the negativity from my life. Over the last several weeks, it seems the sources of negativity are rampant. I have noticed an increase of negativity and was determined to reduce it. First, I must deal with my own struggles, as every person has.
