Baked asparagus with balsamic butter sauce

It’s hard to believe, but Easter is just around the corner.  Our family always gets together for an early dinner on Easter.  Usually I am in charge of a side dish.  This recipe for baked asparagus with balsamic brown butter is a perfect accompaniment to ham and potatoes.

Baked asparagus with balsamic butter sauce

Makes eight servings

  • Two bunches asparagus, trimmed
  • cooking spray
  • salt and pepper to taste
  • ¼ c. butter
  • 2 Tbl. low-sodium soy sauce
  • 2 teas. balsamic vinegar

Preheat oven to 400 degrees.

Arrange the asparagus on a baking sheet. Coat with cooking spray, and season with salt and pepper.

Bake asparagus 12 minutes in the preheated oven, or until tender.

Melt the butter in a saucepan over medium heat. Remove from heat, and stir in soy sauce and balsamic vinegar. Pour over the baked asparagus to serve.
