Spicy Chicken Stir-Fry

Another favorite recipe of mine that is a single serving is this recipe for Spicy Chicken Stir-Fry. I love spicy food and I especially love Asain - it reminds me of all the good food back home in Seattle, where I grew up. When I am really missing home, I whip up this and it takes me back. This recipe is ready to eat in 15 minutes and is so delicious and spicy. Enjoy!

Spicy Chicken Stir-Fry

Makes one serving

• 1 tsp. Peanut oil

• 1 boneless, skinless chicken breast half

• 1 clove garlic

• ½ jalapeno chile

• 4 oz. snow peas

• Sea salt, to taste

• Ground pepper, to taste

• 1 Tbsp. lime juice

• 1 Tbsp. chopped roasted peanuts

• ¼ c. fresh basil leaves, optional

In a medium nonstick skillet, heat oil over medium-high. Add chicken and cook until browned on one side, about two to three minutes. Add garlic, chile, snow peas and two tablespoons of water. Cook until chicken is opaque throughout, about three minutes. Season with salt and pepper. Stir in lime juice, peanuts and basil.
