Pesto scrambled eggs

Light summer breakfast are hard to come by if you don't want the usual things like fruit or yogurt. This recipe for Pesto Scrambled Eggs is light and fluffy. Though it might sound unusual, the flavor is amazing. It is a perfect, easy summer breakfast. Enjoy!

Pesto Scrambled Eggs

Makes one serving

• 1 tablespoon vegetable oil

• 1 egg, lightly beaten

• 1/4 cup shredded Cheddar cheese

• salt and pepper to taste

• 1/2 teaspoon pesto

Heat oil in a skillet over medium heat. In a small bowl, combine egg, Cheddar cheese, salt and pepper. Pour into pan, and cook stirring for three to five minutes, or until desired doneness. Remove from heat and stir in pesto.
