Mexican corn on the cob

Summertime brings lots of opportunities for picnics, parties and gatherings with friends and family. If you attend many of these, you might get tired of the same food being served over and over. Why not try this recipe for Mexican corn on the cob? The cheese will melt in your mouth and the flavor will bring new life your party. Enjoy!

Mexican Corn on the Cob

Makes four servings

• 4 ears corn, shucked

• 1/4 c. melted butter

• 1/4 c. mayonnaise

• 1/2 cup grated cotija cheese

• 1 tsp. Cayenne pepper (optional)

• 4 wedges lime (optional)

Preheat an outdoor grill for medium-high heat.

Grill corn until hot and lightly charred all over, seven to 10 minutes, depending on the temperature of the grill. Roll the ears in melted butter, then spread evenly with mayonnaise. Sprinkle with cotija cheese and serve with a lime wedge.
