Fiery fish tacos with corn salsa

It's a new year and if you are like me, you have a goal to lose some weight and eat healthier. I am constantly looking for new dishes to try that are better for my diet. I stumbled upon this recipe for fish tacos and it is delicious. I like to use halibut, but you can easily substitute walleye or any other white fish.

Fiery fish tacos with corn salsa

Makes six servings

• 1 c. corn

• One-half c. diced red onion

• One-half cup diced red bell pepper

• One cup fresh cilantro, finely chopped

• One lime, zested and juiced

• Two tbl. low-fat sour cream

• Two tbl. cayenne pepper

• One tbl. black pepper

• Two tbl. sea-salt

• Six (4 oz.) walleye or other white fish

• Two tbl. light olive oil

• 12 corn tortillas, warmed

In a medium bowl, mix together corn, red onion, red bell pepper and cilantro. Stir in lime juice and zest. In a small bowl, combine cayenne pepper, ground black pepper, and salt. Brush each fillet with olive oil, and sprinkle with spices. Arrange fillets in heated saute pan and cook for three minutes per side. For each fiery fish taco, top two corn tortillas with fish, sour cream, and corn salsa.
