White chocolate fudge with pecans
My favorite gifts to receive on Mother's Day are the ones that my children make for me. The time and love that goes into homemade gifts make them extra special. I am not a huge chocolate fan, but love white chocolate. This recipe for white chocolate fudge with pecans is very easy for children to make and is a decadent yet simple gift kids can make for their moms. I know I will be slipping the recipe to my children with a wink and a nudge.
White Chocolate Fudge with Pecans
Makes two and a half pounds
• 1 (8 oz.) pkg. cream cheese
• 4 c. confectioner's sugar
• 1 ½ teas. vanilla extract
• 12 oz. white chocolate, chopped
• ¾ c. chopped pecans
Grease an 8 by 8 inch baking dish. Set aside. In a medium bowl, beat cream cheese, sugar and vanilla until smooth. In the top of a double boiler over lightly simmering water, heat white chocolate, stirring until melted and smooth. If you don't have a double boiler, you can use a metal bowl over a pot of water. Fold melted white chocolate and pecans into cream cheese mixture. Spread into prepared baking dish. Chill for one hour, then cut into one-inch squares.
