Tomato Watermelon Salad

Our weather is so crazy - so much rain and now soaring temperatures. When it is too hot to cook, my go-to dinners usually involve a sandwich or salad. This recipe for tomato watermelon salad is unusual, spicy and quite delicious. Enjoy!

Tomato Watermelon Salad

Makes eight servings

• 1 large yellow tomato, cut into cubes

• 1 large red tomato, cut into cubes

• 2 c. watermelon, seeded and cubed

• ¼ c. rice wine vinegar

• ¼ c. olive oil

• 2 Tbl. Sriracha sauce

• 2 teas. honey

• 1 Tbl. fresh basil, chopped

• salt and pepper, to taste

Spread watermelon, yellow tomato and red tomato onto paper towels to drain some of the moisture. Transfer to a large bowl.

Whisk vinegar, olive oil, chile-garlic sauce and honey together in a small bowl until the olive oil and vinegar have combined. Pour over the watermelon mixture. Season with lemon basil, salt and black pepper. Toss gently to coat.
