Pasta with bacon and tomatoes

My children love pasta and I am always looking for healthy recipes that they will enjoy and that won't expand my waistline. This recipe for pasta with bacon and tomatoes fits the bill. With 21 grams of protein, it works well for a high protein diet. When available, use fresh basil; otherwise you can use dried crushed basil.

Pasta with Bacon and tomatoes

Serves four to six

• 4 slices of bacon, diced

• ½ c. chopped onion

• 1 teas. minced garlic

• ¼ teas. crushed red pepper flakes

• 2 cans (14.5 oz) stewed tomatoes

• 1 lb. linguine, uncooked (I use wheat linguini)

• 1 Tbl. fresh basil, chopped

• 2 Tbl. fresh grated parmesan

Cook diced bacon in a large saucepan over medium high heat until crisp, about five minutes. Drain all but two tablespoons of drippings from the pan.

Add onions, and cook over medium heat about three minutes. Stir in garlic and red pepper flakes; cook 30 seconds. Add canned tomatoes, undrained; simmer 10 minutes, breaking up tomatoes.

Meanwhile, cook the pasta in a large pot of four quarts boiling salted water until al dente. Drain.

Stir basil into the sauce, and then toss with cooked pasta. Serve with grated parmesan cheese.
