I love spicy food, but my kids do not. This recipe for Hobo Hot Dish balances my need for heat with their mild tastes. It is really easy to make and so delicious.

Hobo Hot Bake

Makes eight servings

• 2 pkgs. turkey kielbasa, sliced

• 3 lbs. small red potatoes, halved

• 1 lb. baby carrots

• 1 large onion, sliced

• 3 whole bay leaves

• 3 teas. oregano

• 2 Tbl. garlic, finely chopped

• 3 teas. basil

• 3 Tbl. olive oil

• Sriracha hot sauce (optional)

• Salt and pepper to taste

Preheat oven to 375 degrees. In a 13 x 9 inch baking pan, combine cut potatoes, carrots, onion, kielbasa and spices except the Sriracha hot sauce. Drizzle with olive oil and stir. Cover with foil and bake for 45 to 60 minutes, or until the potatoes pierce easily with a fork. Drizzle Sriracha hot sauce on top and serve.
